The ingredients required to make
this fantastic pudding are: 200 gm
raisins, 200 gm sultanas, 150 gm currants,
25 gm chopped almonds, 1 tsp ground
mixed spice, ¼ tsp grated nutmeg,
½ tsp ground cinnamon, 1 small size
cooking apple fully peeled and grated,
rind of finely grated one orange,
juice of one lemon with 150 ml of
brandy, 2 eggs, 125 gm of fresh white
breadcrumbs, 125 gm butter, 225 gm
soft brown sugar, 50 gm self raising
flour.
Process: Same as the shape
of the basin cut a butter paper and
fit it in and then butter up. Mix
together the butter and sugar until
soft and creamy in a large bowl. Beat
in the flour and mix the spices, eggs
and other ingredients and continue
stirring till the mixture becomes
very soft. Pour the mixture into the
basin and level it. Cover the basin
with butter paper and place in a pan
of simmering water. The water should
come to halfway of the basin and the
pan should be covered with a tight
lid. Steam for about 6 hours by keeping
the steam going by pouring more water
as soon it evaporates. Now before
serving make it sure that it is heated
for 2 hours to moisten the pudding.
